paleo oopsie muffins

choco-oatmeal-banana paleo muffins!

Now, as you read this, please try to keep in mind that this is my very first attempt ever at baking from scratch, so whatever the result is, give me some leeway.

Ingredients:

3 Eggs

12 Muffin Cups

1/2 Banana

Roughly 1/2 Tablespoon Powder Cocoa

1/2 Cup Cream Cheese
Dash of Salt

Dash of Cream of Tartar

Roughly 1/2 Tablespoon of Sugar

1/3 Cup Rolled Oats

The first thing that I did was to separate the eggs from the yolks into two separate containers. I then added my cream of tartar to my whites. Next, add your cocoa powder, banana, salt, sugar, cream cheese and rolled oats to the yolks.

Preheat your oven to 375 degrees. I whipped my whites until they formed very firm peaks and then I mixed my other bowl of ingredients thoroughly. I made sure that my whites were firm enough that I could flip the measuring cup over without them slipping out and I also made very sure not to get any yolk into my whites.

After your white and yolks are separately mixed, gently fold the yolk mixture into your whites. Be careful not to deflate the whites while doing this. I then carefully poured the fluffy mixture into my muffin tins. I baked my muffins until they started to turn golden brown... Now here is the tricky part, when I took my muffins out they were gorgeous. Then, after they cooled... TADA, deflation. If there is anyone out there reading this, do you have any advice on how I can keep these from deflating again if I make them in the future? Maybe I didn't cook them long enough... Maybe I need to get some yeast for the recipe, or baking soda... You tell me?

UPDATE: Upon cooling these deflated muffins, I decided to try one despite their sad, flat appearance... DO NOT USE THIS RECIPE. These tasted really bad. Totally unpleasant. I will be trying this recipe again with further reference from other non-paleo muffin recipes. Hopefully next time they will be better.
